Phytochemicals: Mechanisms of Action

Compelling epidemiological evidence associates
diets rich in fruits, vegetables, and whole grains with decreased risk of
chronic degenerative diseases. Research accumulating over the past five decades
has begun to identify and characterize the effects of certain plant-derived
compounds on a variety of physiological and pathological processes. As research
in this exciting area of health promotion evolves, phytochemical mechanisms of
action are slowly emerging as foundational pharmacokinetic and metabolic
characterization takes place.
Keeping pace with advances in these areas, this conference features research
presentations that will highlight recent developments regarding the
bioavailability, pharmacokinetics, metabolism, and clinical effects of a
variety of phytochemicals. Featuring an international roster of recognized
researchers, this conference will present state-of-the-art phytochemical
research in the context of disease prevention and health promotion.
